Best Ever Fluffy Pancakes
(Makes about 12 small pancakes)

Ingredients:
1 cup flour
3/4 tablespoon baking powder
2 tablespoons sugar
pinch of salt
1/2 teaspoon of cinnamon, nutmeg, & ginger if desired
3/4 cup milk
2 tablespoons oil
1 egg
dash of vanilla
dash of molasses if desired

Directions:
Whisk dry ingredients in a medium sized bowl. Add wet ingredients. Mix until just combined (there will be lumps)

Heat frying pan on medium heat, then grease with. butter. Using a small measuring cup, scoop batter onto pan, & cook until underside of pancake is golden brown. Flip & cook other side until golden brown.

*This recipe has help up well with any & every substitution (gelatin egg, gluten free flours, almond or rice milk, coconut sugar, etc.)
